We all remember Jenny for her many years in Harrisville as the Postmistress. She disdained modern calculators and insisted on doing her sums of stamp purchases the old-fashioned way which enabled the citizen of the town a chance to visit and get caught up on the local gossip. She was also an incredible Red Sox enthusiast and knew more information about the Sox than Sparky Lyle. While Mary was carrying Peter, her oldest boy, Jenny was one of the guests at the baby shower and brought blueberry muffins. Mary liked them so much she asked for the recipe.
2 eggs
1 c sugar
pinch salt
2 c flour
2 t baking powder
½ c hot milk
butter
1 t vanilla
1 c blueberries
Combine eggs, sugar and salt. Add 1 c flour and baking powder, mix gently (this was before the advent of Mixmasters & KitchenAids says Mary). Heat and add hot milk, butter about walnut size. Gently mic in another cup of flour and the vanilla. Fold in blueberries. Bake at 400° for 20 minutes. Makes 18 muffins.
