Plastos, aka “Plaster” (Contas recipe)

Batter (mixed)
3¼ c flour
½ c olive oil
1 t salt
2½ c water
1 sprinkle garlic powder

Guts (mixed)
10 oz fresh spinach, cut up into small pieces
1 chopped onion
2 eggs
Handful of farina
½+ lb feta cheese
½ t salt
¼ c olive oil

Preheat oven to 350°. Grease 9×12 plan. Pour half batter into bottom, then “guts,” then top with remaining batter. Mix some olive oil and milk, and drizzle over the batter. Bake for 30–40 minutes, or until batter bubbles at the sides of the pan. Cover for first half hour, then uncover to brown.
