Pumpkin Walnut Muffins

½ c oil
¾ c + 2T pumpkin
½ c buttermilk
2 eggs
4 T molasses
1 t vanilla
1¾ to 2 c flour
1½ t baking powder
1 t cinnamon
½ t ginger
¼ t cloves
¼ t nutmeg
¼ t baking soda
½ t salt
1 c brown sugar

Preheat oven to 375°F. Grease 12 muffin tins. In bowl, whisk together all wet ingredients. In separate large bowl, sift together dry ingredients (except brown sugar). Whisk brown sugar into dry ingredients. Add the wet ingredients to the dry ingredients, and stir until mixed. Bake about 25 minutes (check at 20). Can add 1 c chocolate chips and/or walnuts. Only makes about 9 muffins.
