Sarah’s Best Cornbread

¾ c and a bit of yellow corn meal
1c and a bit of flour
½ c sugar
3 t baking powder
½ t salt
1 c milk OR ½–¾ sour cream and ½–¾ c milk
1 egg, beaten
2 T bacon fat, melted

Preheat oven to 425°. Grease an 8”-square cake pan (glass good too); mix cornmeal, flour, sugar, baking powder and salt in a large bowl. Add milk, egg and bacon fat and blend well. Spoon into pan and bake about 20 minutes (start checking at 15 minutes).
