Nana’s Meat Loaf

2 lbs lean ground beef
1½ c freshly grated white bread (4–5 slices)
½ c freshly grated Romano cheese
⅓ c fresh chopped parsley
1 t salt
½ t pepper
2 eggs
dash of ketchup
oregano
1 can crushed tomatoes

Mix all ingredients until well blended and pat into a 9×12-inch pan or cookie sheet so that mixture is about 3/4 of an inch thick. Pour tomatoes over meat. Sprinkle with oregano. Bake at 400° for 20–30 minutes.
