2 T olive oil
¾ c chopped onions
4 c chopped fresh tomatoes
½ t dried oregano
1 t salt
½ t freshly ground black pepper
Heat oil in saucepan and add onions. Saute for 2 min on medium heat. Add rest of ingredients; cover and cook on med heat for 10 minutes. Push through a food mill using the large screen.
Note: Sauce tends to be thin: can cook down to thicken; otherwise, serve with corkscrew pasta, or other pasta that holds a lot of sauce.
