Breakfast Egg Casserole

3 slices bread, cubed
1 pkg (2.5 oz) ready to eat ham, chopped
4 oz cheddar cheese, grated
3 green onions w/ Tops, sliced
4 eggs
1 c milk
½ t dry mustard
⅛ t paprika

Place bread cubes in greased 9×5 loaf pan. Layer ham, cheese, and onions over cubes. In mixing bowl, beat eggs, milk, dry mustard, and paprika. Pour mixture over layered ingredients. Let stand 15 minutes before baking. Bake at 350° for 35-45 mins, until puffy and lightly browned. Let stand 5 min and serve. Can be prepared the night before — simply refrigerate and bake in the morning per directions.

Note: Mix it up however you like! For a festive Christmas dish, add red peppers and spinach for color. Also good with cooked sausage instead of ham.
