Jo’s BEST Banana Bread

1 c sugar
⅓ c butter
2 eggs
3-4 ripe bananas, mashed
⅓ c water
1⅔ c flour
1 t baking soda
½ t salt
¼ t baking powder

Add ins of your choice: ½ c. chopped walnuts and/or chocolate chips; 1 t cinnamon, nutmeg and/or vanilla. (highly recommend the vanilla at minimum).

Heat oven to 350°; grease bottom of loaf pan. Mix sugar and butter in a stand mixer; add in eggs until blended. Add bananas and water; beat 30 seconds. Stir in dry ingredients (including spices and/or vanilla, if using). Stir in any nuts & chocolate by hand. Pour batter into prepared loaf pan and bake for 55 minutes. Cover edges with tin foil to avoid overcooking, and return to oven for 10+ minutes, until center is set and toothpick comes out clean.
