8 bone-in chicken thighs, skin on
In dutch oven 4–5 T butter, brown chicken thoroughly, both sides. Salt and pepper both sides.
Add ¾–1 lemon, cut into wedges
Add ¼–½c madeira
Jar of mushroom slices
Jar of pimentos
1 lg onion chopped
Put covered dutch oven in oven at 350°. After 30 minutes, stir, remove cover. Let cook another 30–60 minutes, stirring occasionally.
Take out of oven. Remove chicken to dish (or plates).
Take some sauce out of pot, add 2T+ flour for roux. Add sherry back to pot, bring to boil for 2 mins. Taste and season. Serve over new potatoes and chicken.
