Chicken Kabobs

Marinade:
½ c soy sauce
⅔ c salad oil
¼ c sugar
2 T lemon juice or sherry
1 small clove of garlic, crushed

Kabobs:
3 chicken breasts, boned, cut in squares
12 squares from 2 green and 2 red peppers
1 tomato in 6 wedges
6 mushroom caps
bacon

Marinate chicken in sauce for at least one hour. Alternate chicken and vegetables on skewers, brush with marinade. Broil 20–25 minutes or longer ,about 4 inches from heat, basting frequently.

NOTE: this recipe was originally made for the grill, but Noni found that the tomatoes would often fall off, or the veggies would be overdone, etc. To counteract this, she will sometimes do one of the following: Put chicken with peppers to broil. Cook bacon in large skillet, remove, add tomatoes, mushrooms and more peppers. Saute, add bacon and some marinade. Serve over the chicken kabobs. OR do mushrooms etc. on the side with peppers.
