Chicken Rice Casserole

2 c diced cooked chicken
1 c sliced celery
1 small finely chopped onion
½ c chopped walnuts (opt.)
2 c cooked rice
1 can cream of chicken soup
½ t salt
½ t pepper
1 T lemon juice
½ c mayonnaise
½ c water
2 c crushed potato chips

In large bowl combine first nine ingredients. Mix mayonnaise with water until smooth and add to chicken mixture. Turn mixture into greased 9-inch square pan. Bake at 450° for 25 minutes. Remove and top with potato chips. Return to oven for another 5 minutes. Serves 6-8. Ginny says this is a favorite of the priests.
