1 c dry bread crumbs
⅓ c grated Parmesan cheese
¼ c minced fresh parsley (2 T dry)
pinch of salt
¼ t pepper
1½ sticks margarine, melted
1 clove garlic, minced
1.5-2 lb chicken
Preheat oven to 350°. Mix bread crumbs with cheese, parsley, salt, and pepper. Combine margarine with garlic and dip chicken piece in, then roll each piece thoroughly in bread crumb mixture. Place in a single layer on shallow baking plan. Sprinkle with remaining bread crumb mixture. Bake 50 minutes at 350.
I’m not sure what kind of chicken this was intended for, but I found that it works well with boneless, skinless chicken breasts. This recipe makes enough breading to cover at least 2 pounds of chicken.
