Turkey Tetrazzini

¾ lb mushrooms
1 sm green pepper, slivered
¼ c margarine
3 T flour
2 T salt
¼ t pepper
2½ c light cream
4 c dried, cooked turkey
2 pimentos, chopped
2 T sherry
6 oz spaghetti, cooked
2 egg yolks, beaten
grated Parmesan gheese
*almonds, olives, water chestnuts

Cook mushrooms and peppers in margarine for 5 minutes. Bland flour and seasonings in pan, then add cream and cook, stirring until thick. Add turkey, pimentos, sherry, and any other “nurds” (per Noni). Add small amount of turkey mixture to egg yolks, then stir in remaining mixture. Put spaghetti in oven pan, top with turkey mixture. Sprinkle with cheese. Bake in a slow oven (300°) about 45 minutes. Put under broiler if necessary to brown slightly. 6 servings.

  1. Note: 2T salt seemed like a LOT to me — I probably did closer to 1T. Also added a dash of paprika and peas, because…PEAS!
