Place 4 chicken breasts, boned and halved, skin side up in buttered shallow baking dish. Melt ½ stick butter, use a little to paint chicken. Sprinkle with ½ t salt. Put in 375° oven, uncovered; bake 30 minutes, until juices are pretty well dried up.
Mix:
3 T flour
3 T sugar
½ t salt
½ t cinnamon
⅛ t ginger
¼ t dry mustard
Stir into remaining melted butter. Add 1½ c orange juice. Stir constantly until sauce is thick and smooth. Pour over chicken; bake 40 min more. Broil for a bit if not brown enough. Serve with rice to which pineapple has been added.
