Spiced Seckel Pears

6 c distilled white vinegar
8 c loosely packed lt brown sugar
1 T ground cloves
1 stick cinnamon
1 T juniper berries
6 hot red peppers
6 lbs seckel pears

Place all ingredients except pears into a large heavy-bottomed pot. Cook over medium heat until brown sugar has melted — about 5 min. Peel pears, leaving stems on, and place in pot with vinegar mixture. Bring to a boil, reduce heat, and simmer until pears are tender — about 10 minutes. Pack hot pears into hot sterilized jars, cover with boiling water to within ½ inch of jars’ tops, and seal. Makes about 4 qts.
