Pear Chutney

8 c peeled, cored, and diced pears (pref. Bartlett)
1 lb lt brown sugar
2 c cider vinegar
1 onion, chopped
1 c seedless raisins
1 t each ground cinnamon and cloves
2 oz minced crystallized ginger
2 t mustard seed
2 cloves garlic, minced
1½ t cayenne pepper
2 t salt

Mix all ingredients and cook over low heat until desired consistency is reached (about 30 min). Pack into hot sterile jars. Seal and process 5 mins. Makes 2½ pts.
