Pizzella

1½ c Crisco or margarine
3 c sugar
12 eggs
½ c milk
Salt pork to grease iron
4 t baking powder
2 T vanilla, almond, or lemon extract
4 oranges and/or lemons
15 cups (5 lbs) sifted flour

Combine Crisco and sugar slowly in beater. Add 2-3 eggs and blend evenly. Add balance of eggs. Peel thin layer of fruit rinds; add enough water to mix in blender or grate rinds on fine grater (or use 4 oz candied rind). Add milk, stir, add grated rinds. Mix flour and baking powder together, add slowly to mixture. Remove dough from bowl. Knead by hand a few minutes. Dough should not be sticky. Roll into approx size shapes for iron. Cook about 10-15 sec. per side. Note: makes A LOT!

Fruit Filling
½ c sugar
½ c dates, cut
½ c raisins
¼ t lemon juice
2 T water
1 T flour
¼ t grated lemon rind OR 1 T finely chopped candied lemon peel

Combine ingredients and cook 5 min. Remove from heat and cool before serving. Can add ½ c figs and ½ c walnuts, both cut in small pieces, if you want. For large batch, double everything, and add water until right consistency. Can add honey of wanted.
