Sugar Crumb Coffee Cake

1¼ c sifted flour
1¼ t baking powder
¼ t salt
3 T shortening (or butter)
⅔ c sugar
1 egg, unbeaten
5 T milk

Topping
1½ T butter
4 T flour
2 T confectioners sugar
dash of salt
½ t cinnamon
½–1 c chopped nuts
¼ t vanilla

Stir flour once, measure, add baking powder and salt; resift. Cream butter and sugar. Add egg and beat until fluffy. Add flour alternatively with milk. Beat after each addition. Turn into greased pan and cover with topping mixed together. Bake in moderate oven (350°) for 30 minutes or until done. Serve warm and eat LOTS (says Noni).

Note: Several family members have been known to double the amount of topping in the recipe. Do as you will.
