Cheryl’s Beans That Sarah Likes

1 lb dried navy or pea beans
½ lb salt pork
1 med onion, sliced
½ c brown sugar, packed
maple sugar or syrup
6 T molasses
1 t salt
1 t dry mustard
⅛ t pepper

Place beans in saucepan, cover with water; boil for 2 min. Remove from heat. Let stand 1 hour. Simmer uncovered for 50 min. Drain beans, reserve liquid. Layer pork, beans, and onion. Stir remaining ingredients plus 1 c bean liquid; pour over beans. Add enough liquid to almost cover beans. Cover, bake 3-4 hrs at 300°. Remove cover for last half hour.
